What is Mister Collins?
It's more than just awesome food.

Mister Collins is an American restaurant which focuses on made from scratch American fare from the creative hands of Andy Yeager (formerly of the Hillstone Restaurant Group, which operates concepts such as Houston's, Café R+D, etc.) and his team. The menu highlights true American classics which include sandwiches, salads, and entrees. The menu at Mister Collins changes seasonally, and focuses on using as many local ingredients as possible.

Everything on our menu is made in house, from the salad dressings to the grinding of our burgers.

Mister Collins has a killer wine list, mostly derived from California but also including some stand-outs from Spain, Italy, and other great wine growing regions. Mister Collins is becoming a neighborhood hangout, this is mostly because of its laid back atmosphere and choice of music... don't wear a tie, you'll be uncomfortable.

Most importantly, Mister Collins tries to exude value in everything it portrays. We are a business that values its guests, we shake hands, we kiss babies, we remember names, we try to be better today than we were yesterday.
